What’s On the Menu?
SWEET POTATO CASSEROLE
All caps, because it is just that good.
What you’ll need:
7-8 sweet potatoes (peeled and chopped)
1/2 cup of brown sugar
3-4 spoonfuls of unsalted butter
Spoonful of vanilla
Salt
1/2 cup chopped pecans
Mini marshmallows
While you’re prepping this dish, preheat the oven to 190°C (375°F).
Put the sweet potatoes (chopped) into a pot of cool water on the stovetop. Now turn up the heat until it begins to boil, then set it to simmer.
Simmer. Drain. Now time to add in the good stuff. Add in the brown sugar, butter, vanilla and a shake a good amount of salt in there.
Now grab a potato masher and mash it up! After it’s throughly mushy, add in 1/4 cup of the pecans too and stir them in – don’t mash.
You’re almost done, scrape it into a baking dish. Top the mixture with the rest of the pecans and marshmallows. Beautiful. Okay, go on, munch on a few mallows before this hits the oven.
Bake for 25 minutes at 190°C (375°F).
And out of the oven…
Golden perfection.
Seriously, this recipe is amazing. Make it immediately. Probably not to share either.

Shawna, I fully agree. This is nearly the healthiest dessert I could dream up. Veggies as dessert (okay and a little sugar) is the best way to indulge. X

At the risk of being labeled a total twit, would you ever used canned sweet potatoes? I’m just curious. For me, peeling sweet potatoes is much like attempting to put toothpaste back into the tube….

You’re not a total twit at all, but are very practical and value your time! I looked into this for you, and I found on Amazon Organic Sweet Potato Puree. I’m sure there are non organic versions available as well. Most importantly though, there is only one ingredient in this can – sweet potatoes! If you go this route, I’d say maybe use 2-3 cans depending on how many servings you want to make, and heat on the stovetop before stirring in the rest of the ingredients.
As the ingredients are the same, I think this would be a great substitute idea.

There are a couple of brands available here that are identified as cut yams (aka sweet potatoes), rather than the pureed form. I’ll keep you posted on the Great Yam Experiment as it develops. Thanks!
