Gone are my days of scouring London for the latest and greatest restaurants…
Okay, maybe not gone forever, but I’m taking a luxury food hiatus.
I have a specific agenda: With less than two months to go until my wedding and only four weeks until I run my half marathon…
I’m ready to get into the best shape of my life.
So what better way to jumpstart being healthy than by starting first thing in the morning?
Bring on this newfound recipe for homemade granola passed along to me by the healthiest person I know, my cousin Sarah.
What you’ll need:
2 cups of Oats
1/4 cup sunflower seeds
1/4 cup walnuts
1/4 cup pecans
1 tsp vanilla extract
2 tbsp coconut oil
2 tbsp maple syrup
Start with your oats!
Add in your sunflower seeds.
Measure and crush up the walnuts and pecans before adding them to the mix.
After all the dry ingredients are in, add the vanilla, coconut oil, and maple syrup.
Mix it up with your hands! This is important, it keeps you messy and having fun!
Now, line a baking sheet and set the oven to 300ºF (150ºC) and pop it into the oven for 10 minutes.
Once that timer goes off, take this beauty out of the oven and resist the urge to gobble it down immediately (it’s too hot)!
Now most people don’t eat granola by itself. Some people enjoy it as cereal with milk. Some with yogurt.
I’m going to highly recommend you take the yogurt route.
My absolute favorite way to eat homemade granola is to combine it with a cup of greek yogurt and a handful of blueberries.
PS. The granola serving size is 1/2 cup. I promise it’s more than enough.
It feels a little bit naughty calling this a healthy breakfast.
It tastes like dessert.
But it’s not. This combination is truly health conscious and will keep you full and energized for hours.
And before we go, in case you’re wondering…why is it so important that there are only seven ingredients?
Next time you’re out picking up your groceries, take a look at the amount of ingredients in granola (not to mention the calories). It’s astounding. This recipe takes no time at all and leaves out all the crazy additives.
So I’ve been enjoying my seven ingredient granola in the mornings. Especially before my long half marathon training days. It’s kept my body going and fueled for everything I’m looking to achieve in the day.

ahhh i love granola way too much and would OD on the stuff like whoa, so i have to be super careful not to buy it often. this looks delish! good luck on the health kick and my advice is lots of fruit and veggies and water, and make sure you let yourself have little treats now and then so you don’t crave em and binge. 🙂

It is so addictive, I know! I should probably revise this to say the serving size is 1/2 cup granola. That is probably the only thing keeping me from eating too much of it. Thanks for the healthy advice too 🙂 My treats will almost always consist of dark chocolate and wine… everything in moderation! xo

Oh! Linseed/goji berries? I’ve never even heard of either, so I assume they are crazy healthy for you. I love little additions like that though to amp up simple breakfasts. xo
